In his youth, Benny Tayco dreamed of being a professional athlete until a job as a busser piqued an interest in the culinary arts. After being promoted to Cook at the young age of 19, he began his culinary schooling at Le Cordon Bleu in Portland, Oregon, where he developed his technique and discipline for the craft. After culinary school, Chef Benny began working as a Line Cook at Walt Disney World Swan and Dolphin Resort in Orlando, Florida. He rose up the ranks through a string of industry positions that eventually led him to his current role as Executive Chef at Cohn Restaurant Group’s BO-beau kitchen + roof tap in Long Beach. Chef Benny’s innovative California-French comfort food showcases his favorite style of cuisine with local flavors and seasonal ingredients.
Chef Benny credits his culinary success to his education, work ethic and experiences in the kitchen, as well as to his mentors that pushed him to reach his full potential. He believes it’s important for seasoned chefs to educate new, up-and-coming talent, inspiring passion and discipline along the way. With the help of his dedicated kitchen team and his family, Chef Benny Tayco continues to raise the bar for the Long Beach dining scene and Cohn Restaurant Group as a whole.
